This one is easy and so very good for us. It is one of those treats that you can truly enjoy when the ‘snack-attack’ sneaks up on you.

And… you know what they say…

about ‘an apple a day…’

2 eggs
1/4 cup whole wheat flour
1/4 cup bran
1/4 cup applesauce
1 teaspoon vanilla extract
3 apples – peeled, cored, and chopped

If you don’t eat eggs, you might try the following substitutes:

— 1/4 cup silken tofu=1 egg

— 1/2 banana, blended until smooth or well mashed = 1 egg. Baked goods using banana brown very nicely.

1. Preheat oven to 350 degrees.
2. Place all ingredients except the apples in a bowl and mix well.
3. Stir in the apples.
4. Drop teaspoons of batter on a lightly oiled baking sheet.
5. Bake about 15 minutes or until golden brown.

Yields about 2 dozen apple delights.
