Mango and Black Rice Salad

Mango and raisins give an added sweet twist to this fiber rich salad.

Mango’s powerful antioxidants protects against heart disease. Black rice is an heirloom variety of rice cultivated in Asia, and is an excellent source of fiber! Good for strong, dense, healthy bones!

1 cup black rice
2 cups water
2 cups of diced ripe mango
1/2 cup thinly sliced green onion
1/4 cup finely chopped parsley
2 Tablespoons finely chopped cilantro
2 Tablespoons finely chopped mint
1/4 cup extra virgin olive oil
1/2 cup raisins
1/2 cup dry roasted pine nuts

In a saucepan place water and rice. Cook and simmer for 35-45 minutes or until tender. Drain and cool.

Place rice in large bowl. Stir in mango, green onions, parsley, cilantro, and mint.

Drizzle olive oil around mixture and stir. Toss with raisins and pine nuts. Serve fresh or chilled.

Variations – Long Grain Brown rice can be substituted for black rice.

If you can’t get fresh mangos, then substitute 2 cups of seedless grapes. Enjoy!
