Delicious, bone-healthy simple dessert - brown rice, fruit, almond flakes

Here’s an interesting dessert that can be served warm or chilled. Amazing, satisfying – Rice and fruit and nuts all in one bowl.

2 cups brown rice
5 cups water
4 tbs blackberry, raspberry, black currant or blueberry jam
⅓ cup coconut milk powder, or 1/2 cup dried shredded coconut
⅓ cup brown sugar
2 cups frozen mixed fruits such as raspberries, blackberries, blackcurrants, redcurrants
⅓ cup almond flakes
1 cup sour cream or yogurt

Place rice, water, jam, fruits, coconut milk powder and sugar into a pan, and cook it covered until rice is ready.

Stir in sour cream or yogurt, cook for 1 more minute, place into bowls, and sprinkle with almond flakes and a little coconut if you like.

Serve at once, or chill it and serve later.
