This is about as easy, tasty, and nutritious as any meal can be.

Simple, healthy, delicious brown rice pilaf
1 cup long grain brown rice
1 ¾ cups water
1 cup carrot chopped
½ onion chopped
1 stalk celery chopped
2 tbs olive oil
1 bay leaf

Sauté carrots, onions and celery in olive oil (or water) for a few minutes.
Add rice to the water. Add vegetable mixture, 1 bay leaf to a large saucepan and cover.

Bring to a boil. Reduce to a simmer for 30-40 minutes or until all water is absorbed.

This recipe can also be done completely in a rice steamer. Add a handful of diced frozen vegetables for color and added nutrition.
